Ingredients

  • 1 cup almond flour

  • 2 tbsp coconut flour

  • 2 tbsp collagen peptides (unflavored)

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 large eggs

  • 1/3 cup unsweetened almond milk (or any low-carb milk)

  • 2 tbsp melted coconut oil or butter

  • 1 tsp vanilla extract

  • 2–3 tbsp low-carb sweetener (erythritol, monk fruit, or preferred sweetener)

  • Optional toppings: berries, sugar-free syrup, whipped cream, or nut butter


Instructions

1. Preheat Waffle Iron

  • Turn on your waffle maker and lightly grease with coconut oil or non-stick spray.

  • If your waffle maker has temperature settings, use medium heat.

2. Mix Dry Ingredients

  • In a medium bowl, whisk together almond flour, coconut flour, collagen peptides, baking powder, salt, and sweetener.

  • Make sure there are no clumps—this ensures a smooth batter.

3. Mix Wet Ingredients

  • In a separate bowl, whisk the eggs, almond milk, melted coconut oil, and vanilla extract until fully combined.

6. Serve

    • Sugar-free syrup

    • Whipped cream or coconut cream

    • Nut butter drizzle
