Ingredients

Dry Ingredients:

  • 1 cup almond flour (finely ground)

  • 2 tbsp coconut flour

  • 1 tsp baking powder (gluten-free)

  • 1/4 tsp salt

  • 1 tsp cinnamon (optional, for flavor)

Wet Ingredients:

  • 3 large eggs

  • 1/3 cup unsweetened almond milk (or any keto-friendly milk)

  • 3 tbsp melted butter or coconut oil

  • 1 tsp vanilla extract

  • 2–3 tbsp erythritol or preferred keto sweetener (adjust to taste)

Optional Toppings:

  • Sugar-free syrup

  • Fresh berries (strawberries, blueberries, raspberries)

  • Whipped cream (sugar-free)

  • Chopped nuts


Instructions

1. Preheat the Waffle Maker

Plug in your waffle maker and preheat according to the manufacturer’s instructions. Lightly grease it with coconut oil or butter to prevent sticking.


2. Mix Dry Ingredients

In a medium bowl, whisk together:

  • Almond flour

  • Coconut flour

  • Baking powder

  • Salt

  • Cinnamon (if using)

Ensure there are no lumps. Coconut flour absorbs moisture quickly, so mixing it with almond flour helps balance the texture.


3. Mix Wet Ingredients

In a separate bowl, whisk together:

  • Eggs

  • Almond milk

  • Melted butter or coconut oil

  • Vanilla extract

  • Sweetener

Whisk until smooth and slightly frothy.


4. Combine Wet & Dry Ingredients

Slowly fold the dry ingredients into the wet mixture. Stir gently until just combined. Do not overmix—overmixing can make waffles dense.

If the batter seems too thick, add 1–2 tbsp more almond milk to reach a pourable consistency.


5. Cook the Waffles

  • Pour enough batter into the preheated waffle maker to cover the surface (usually ~1/2 cup per waffle).

  • Close the lid and cook for 4–6 minutes, or until golden brown and crisp.

  • Carefully remove the waffle and place it on a wire rack to maintain crispiness.

Tip: Waffles continue to crisp slightly after leaving the waffle maker.


6. Serve & Enjoy

Top your waffles with:

  • Sugar-free syrup

  • Fresh berries

  • Whipped cream

  • Chopped nuts or a sprinkle of cinnamon

These waffles are best enjoyed immediately but can also be stored in an airtight container in the fridge for up to 3 days. Reheat in a toaster or air fryer for extra crispiness.
